Description
Chia seeds are tiny black seeds, that were were an important food for the Aztecs and Mayans. “Chia” is the ancient Mayan word for “strength”. Because of its high soluble fibre content, chia seeds can absorb up to 10–12 times their weight in water. They are one of the highest sources of fibre, hence the reputation as a Superfood.
Chia seeds are high in protein and have a good balance of essential amino acids, so your body should be able to make good use of their protein content. Carbohydrate content is mostly indigestible, making them a good low-carb, high-protein source.
They can be eaten raw, soaked in juice, added to porridge, pudding, smoothies or added to baked goods. Because of their ability to absorb both water and fat, they can be used to thicken sauces and as egg substitutes in recipes. They can also be mixed with water and turned into a gel – it is recommended that they be soaked for roughly 20 minutes in water before being added to smoothies, or bread/muffin recipes.
